HACCP- The dishwasher did not reach a final temperature of 180F. It only reached 150F. Employee drinks should be stored away from food and dishes. Sanitizer bucket should be at 50-100PPM for the chlorine.

*12  Observed an employee drink/drinking in the following location. Employee drink was stored on shelf with pans. Employee removed this drink. The consumption of food/drink shall be done in a designated area only. Immediate/Onsite
*20  Observed the dish machine final rinse water to not reach the proper temperature to sanitize the dishes. The dish machine only reached 150F for it's final rinse. Provide for the dish machine final rinse water to reach the minimum required temperature to assure that the dishes are properly sanitized. 750.830. Owner will use three compartmet sink until dishwasher is working appropriately. 48 Hours
*41  Observed the sanitizer solution in/at the following location to be too strong:Sanitizer bucket was too strong with bleach. Employee adjusted it. Provide for the sanitizer solution to be no stronger than the required concentration. 750.820 Immediate/Onsite

Observed no thermometer to be available in the following units. 1. There is no visible thermometer in the reach-in cooler. 2. There is no working thermometer for the True dessert cooler. Observed the following food products to be improperly stored. Flour has no cover on it. There is no plastic or lids on onions or potatoes in the walk-in cooler. Provide for all food products in storage to have proper covers or overhead protection.750.130 Observed the following food products to be improperly stored. Bag of onions on the floor in the walk-in cooler as well as box of meat on the floor in the walk-in freezer. Bag of rice is open downstairs on shelf. keep closed. 750.130 Provide for all food products to be stored at least six inches off of the floor. Immediate/Onsite
